John Putnam makes this raw organic cows milk Tarentaise with the milk from his own Jersey cows on his farm in Vermont, which makes Tarentaise a farmstead cheese par excellence. His cheese was developed from an alpine cheese in the style of his beloved Abondance, but it directly mirrors the climate, pastures, cows and maker that contributed to the making of this cheese. The aged Tarentaise is matured for over a year specifically for Artisanal Premium Cheese. The extra age concentrates the flavors...

This French Abondonce style artisan cheese was originally made by John Putnam of Thistle Hill Farm. After reaching the peak of production, some friends approached with a novel idea. Thistle Hill Farm produces this organic French Alpine-style raw milk cheese up in Pomfret, which is just a stones throw from the store. It derives its name from the valley in the foothills of the French Alps where John and Janine spent a year learning to make this cheese. It is full of the flavor only fresh sweet milk and strict devotion to high quality can create. It is sweet, grassy, nutty, and bursting with flavor. It is a great eating cheese, and a wonderful cooking and grating cheese as well...

Tarentaise was awarded the prestigious honor of "Best Farmstead Cow's Milk Cheese" at the 25th American Cheese Society Conference and, with over 45% butterfat, makes a...
