In Greece, feta accompanies each meal, providing splendid flavor that pairs beautifully with lamb, poultry, beans, and rice. It is often served as a first course drizzled with olive oil and sprinkled with oregano. It can also be used in salads, pies and omelettes. One traditional Greek dish, called 'saganaki' can also be made with feta. Protected by its PDO registration, this feta cannot be immitated.

Long favored by the connoisseurs of fine olives, Divina olives are estate grown and imported from Greece. These green Halkidiki olives are prepared using a meticulous process that is much longer than the typical, large volume preparation used by other producers, but the end result is far more superior. After the curing process is over these olives are stuffed with 100% sheep's milk Feta cheese to create a superb hors d'oeuvre.

The most famous of the Greek-style cheeses, Feta is salty and sharp. Made originally with ewe's milk or a mixture of ewe's and goat's milk, a fine Feta can also be made with cow's milk. Drained curd is salted, washed and placed in brine, where it is ripened for 15-30 days. The hard crumbly version of Feta common in supermarkets is aged for up to 8 months.

Dodoni Greek Feta Cheese 8oz ~ 0.5lb . This is 0.5 pounds from a 33 pound bulk container. Bigger pieces of Feta are better kept than smaller pieces because they last longer and hold the origonal flavor longer . Purchasing by the pound, cut from bulk pieces, will always be fresher and taste better than the smaller pices offered in pre-packaged containers. The difference is enormous.
