This cheese is part of the Brie family, and the only difference between the two is that Coulommiers has a small but thick size. It tastes like sweet almonds. The locals in France usually prefer this cheese when it is at the point of affinage. It matures for at least 2 months before it is ready for sale.

Texture: One should choose a Coulommiers which is soft to the touch with a white heart set in a pate of pale yellow. Its white velvet rind has a slight reddish pigmentation. The pate is very supple and soft.

Coulommiers is, like Brie de Meaux and Brie de Melun a very old cheese; the big difference is that at the cheese does not have an A.O.C. status. There is no standard recipe for this gourmet cheese, and Coulommiers comes in various sizes. The cheese has a white, bloomy, often uneven rind with a little brown mottling as it ages. The maturation time is 8 weeks. It has a faint aroma of mushrooms and the flavor is quite mild and delicate in the young cheese, becoming more pronounced as it matures.

Brie de Coulommiers is said to be the precursor of all other bries. In format, it is smaller in diameter (about 6 inches) and a bit taller than other bries. It has a bloomy rind and an ivory colored interior. We love this cheese when it is still almost fully ripe and still has a somewhat firm interior. When fully ripe and at room temperature, it has a pungent aroma, the interior bulges from the rind, and has a big flavor that comes close to what you might expect from a camembert.
